My Kinda Muffins

I love trying new recipes and especially love when I come across a grain free recipe that is GOOD. Pinterest has a ton, but you never know if they will turn out like promised.

I tried out a new grain free peanut butter muffin recipe from and oh my gosh was it delicious! I will definitely be making these again. My fiancé is a food lover but he is sometimes hesitant when it comes to my “healthy” recipes. This one got an A+ from him, so it was a win!


The recipe is full of ingredients that I already had in my kitchen so this, for me, added to the simplicity of the recipe and I am all about the simple when it comes to baking. In my personal experience, the less ingredients there are the greater chance it will turn out well.

The recipe includes peanut butter, bananas, eggs, honey, baking soda, vanilla, apple cider vinegar (which I didn’t have on hand so I used a dash of rice vinegar instead), and chocolate chips.

I doubled what the recipe called for so I would have more than six muffins. I ended up with two dozen after doubling, which was a nice surprise! I have been eating these for breakfast with my beloved coffee and they may as well be a match made in Heaven.

The doubled recipe I made is as follows:

2 Cups Peanut Butter
4 Medium Bananas
4 Large Eggs
1 Teaspoon Baking Soda
1 1/2 Teaspoon Rice Vinegar
4 Tablespoons Honey
1 Teaspoon Vanilla
8 oz Dark Chocolate Chips (full size)

Combine all ingredients except the chocolate chips into the blender and blend thoroughly. After blended mix in your chocolate chips and then fill muffin pans. Bake at 400 degrees for 13-15 minutes and then ENJOY!
